Chocolate orange Cupcakes!

If you know me, you will know I have an obsession over chocolate orange, jaffa cakes, terry’s chocolate orange, orange matchsticks you name it. So i decided to make some chocolate orange cupcakes yum! and i’m so happy with how the buttercream came out!

So i thought I would share the recipe in case anybody gets a case of choc orange cupcake cravings!

you will need –

  • 100g plain flour
  • 20g cocoa powder
  • 140g caster sugar
  • 40g unsalted butter
  • 1 tsp baking powder
  • 120 ml Milk
  • 1 egg
  • a few drops of vanilla extract

For the buttercream

  • 150g butter
  • 250g icing sugar
  • 150g melted orange chocolate ( i used a bag of the mini terrys orange)
  • 2 tbsp milk

To make the cakes ( This amount made 6-8 large cupcakes)

I mixed the flour, cocoa powder, butter, sugar and baking powder, then mixed into a crumb consistency before adding the milk, egg, and vanilla extract. Once smooth i filled cases with the cake mix 3/4’s full and I popped them in a preheated oven for about 20 minutes.

Once cooled i made the butter cream, i melted the orange chocolate and let that cool a little. Whilst it was cooling i creamed the icing sugar and butter then once smooth i added the melted chocolate and a couple of tbsp of milk, again whisking it together until it was fully mixed. Next I popped it into a piping bag and began piping on the cupcakes before decorating with chocolate orange segments and jaffa cakes.

I hope you enjoy this recipe and it satisfies any cravings! I think this would also be amazing with an orange curd in the middle like a real jaffa cake! Yum, next time I’m trying that!

xoxo
